I don't recall any of the recent bakeries I've visited hitting me with a big, beautiful whiff of fresh baked bread and goodies. Entering Proof Bakery, it was warm and the smell was so inviting it made me want to stay inside. Waiting in line you could see trays of the baked goodies coming out of the kitchen they were baked in. The place was a bit small but charming and attractive. At the time I went, around 11am, the place was packed and I was unable to get a seat. I had to stand at one of the tables outside to eat what I ordered. I came to try one of their chocolate croissants. I really enjoyed eating this chocolate croissant. The golden brown color and visible texture of it was beautiful...just by the look of it I knew these were going to be sweet crisp crunch bites. Now I wasn't offered for this chocolate croissant to be warmed. I thought I would because they had a countertop oven, but they didn't. However it wasn't needed so much

. The little tower of chocolate croissants they had must have came out of the oven not too long ago, because the chocolate wasn't completely cold. It was the slightest bit melted/warm and enjoyable. the chocolate croissant was a nice size, with rustic swirls on the outsides. Taking bites, i was able to see the numerous amount of layers worked into this chocolate croissant. Bite after bite flakes fell leaving a little mess. This chocolate croissant had crisp, flaky bites but still soft, airy, and delicate. The chocolate was yummy, but not the best placement. It was all a bit to one side. But I am glad the chocolate was at least a little warm and melted. I rather have misplaced chocolate that's warm, than nicely placed chocolate that's completely cold. Overall an 8.3/10 chocolate croissant. Thank you so much.
